These little broccoli and cheese patties are just more than a mouthful. Eat them hot out of the oven for a scrumptious treat! This is a great way to get your kids to eat veggies! You could even reduce the cheese and add in pureed garbanzo or white beans to up the fiber and protein.

10 oz. frozen chopped broccoli (thawed and drained)
1 cup grated reduced fat Mexican blend cheese
2 eggs, whisked
2/3 cup seasoned Italian bread crumbs
salt & pepper, to taste
Preheat oven to 375 F
1. Remove excess liquid from broccoli by squeezing with a towel.
2. In a medium bowl, add all ingredients together and mix well.
3. Form small balls or patties with your hands and place on a baking sheet lined with non-stick aluminum foil or parchment paper.
4. Bake for 20-25 minutes, turning patties after 10 minutes.
5. Eat while hot! Enjoy!
