Chutney Chicken

This sweet and savory chicken dish is my kids’ absolute favorite meal. To this day, they request it when they come for dinner. Of course, I like to serve it with brown rice, but they prefer steamed white rice and spoon the sauce over it. Lately I have substituted brown jasmine rice and no one has noticed, or maybe their taste buds are growing up. ☺

Serves 6

Ingredients:
6 boneless, skinless chicken breasts
1 cup Mrs. Ball’s original chutney
1 medium onion, chopped small
2 TBS olive oil
2 TBS Worcestershire sauce
4 TBS organic ketchup
Salt & freshly cracked pepper

Preparation:
1. Preheat oven to 375F and spray a 13’ x 9” pan with olive oil spray.
2. Wash and trim chicken breasts, dry and put in casserole pan.
3. Mix remaining ingredients together and pour over chicken.
4. Bake uncovered for 45-50 minutes. Serve on top of a bed of rice (preferably brown rice) and steamed broccoli and carrots.
