Light and Healthy Cucumber Salad

I don’t know about you, but I just love a lime-cilantro dressing and this one is fantastic over this cucumber salad. It’s a refreshing side salad to just about any meal, but especially when eating Mexican food or a bbq. The picture shows the cucumber spiraled, but I think I would prefer the cucumbers sliced thinly – next time for sure!

Serves 8

2 cucumbers, unpeeled – sliced thin or cut with spiral
1 small red onion, sliced thin
3 limes, juiced
Zest of 1 lime
1/2 jalapeño pepper, chopped fine (to taste)
1/3 cup cilantro, chopped
2 TBS. extra virgin olive oil
Salt to taste

1. Soak the red onions in salted water for a few minutes to remove some of the spiciness. Rinse well with cold water and drain on a towel.
2. Put sliced or spiraled cucumbers and the red onions into a bowl and set aside.
3. Make the dressing: put the zest, lime juice, jalapeño, cilantro, and olive oil in a small bowl and whisk well. Pour over dressing over salad, mix, and flavor with salt, as needed.
4. Refrigerate for at least 30 minutes before serving. Serve cold.
