Springtime Salad

A light and fresh salad to help you shed pounds before summer arrives. The pomegranates add a burst of freshness that will make your taste buds smile! A great meatless meal that everyone will enjoy! To make it vegan, avoid the cheese or buy a plant-based cheese.


Serves 2

Ingredients: 2 cups spring mix lettuce or baby arugula 1 medium fresh pear, Barlett or Comice, stem and core removed ¼ cup pomegranate seeds ½ small red onion, sliced – optional 2 TBS chopped walnuts or pecans 2 TBS light balsamic vinaigrette ¼ cup shaved Parmigiano Reggiano – optional


Preparation: Place 1 cup of salad greens in center of salad plate. Slice pear lengthwise into thin slices, place half on each bed of lettuce. Sprinkle pomegranate seeds, red onion, and nuts equally over each salad. Top with vinaigrette, parmesan, and serve.
