Light and Healthy Cucumber Salad

I don’t know about you, but I just love a lime-cilantro dressing and this one is fantastic over this cucumber salad!


It’s a refreshing side salad to just about any meal, but especially when eating Mexican food or a bbq. Thinly slice your cucumbers - I spiraled them once and didn't love the texture. Remove seeds if you are sensitive to them...


Serves 8


Ingredients: 2 cucumbers, unpeeled – sliced thin 1 small red onion, sliced thin 3 limes, juiced Zest of 1 lime 1/2 jalapeño pepper, chopped fine (to taste) 1/3 cup cilantro, chopped 2 TBS. extra virgin olive oil Salt to taste


Preparation: 1. Soak the red onions in salted water for a few minutes to remove some of the spiciness. Rinse well with cold water and drain on a towel. 2. Put sliced cucumbers and red onions into a bowl and set aside. 3. Make the dressing: put the zest, lime juice, jalapeño, cilantro, and olive oil in a small bowl and whisk well. Pour over dressing over salad, mix, and flavor with salt, as needed. 4. Refrigerate for at least 30 minutes before serving. Serve cold.
