Turkish Tomato Salad

A fresh, crisp, chopped salad that will make your taste buds smile!


This is a great way to enjoy the last of summer’s tomatoes and cucumbers. A great side dish to accompany kabobs, grilled chicken, or seafood.


Serves: 6


Ingredients: 2 large tomatoes (or 4 medium), chopped 1/2 large cucumber, peeled and diced 1/2 yellow pepper, seeded and chopped 1 small onion, diced 2 cloves garlic, minced ½ c parsley, finely chopped 2 TBS fresh lemon juice 1 TBS red wine vinegar 2 TBS Spicy V-8 (or tomato juice) Freshly cracked black pepper, to taste 1/2 tsp paprika 1/4 tsp cumin Salt, to taste (optional)


Preparation: Combine all ingredients and mix well.


Chill for an hour or more so flavors can mingle.


Serve in a pita with hummus or on top of a green salad.
