Hearty Herb & Vegetable Soup

The Ash Soup from Kreation Cafe in Santa Monica is fantastic! When I first had their soup I was hooked! I went there 4 times in one week! LOL! This is my gluten-free version of their soup and I think I did a pretty good job in re-kreating their “Kreation.”


This is a quick and easy recipe that you could throw together in no time! I believe that, traditionally, this soup is topped with caramelized onions and a drizzle of yogurt – that is totally optional! The onions could be made a day ahead of time and heated up just before serving.


Enjoy a big bowl of this yummy soup with a piece of crusty bread or just eat it on it’s own. With ten grams of protein and twelve grams of fiber, this dish will satisfy for hours! It’s ultra-healthy and so delicious! …and, as a bonus, it also freezes well! What have you got to lose?


Serves 8


Ingredients: 1 TBS olive oil 1.5 TBS ground turmeric ½ tsp. freshly ground black pepper ½ brown onion, chopped 2 leeks, chopped 1 – 1.5 TBS garlic, minced (or to taste) 8 cups low-sodium vegetable broth 2 bags spinach (10 oz each) 2 bunches parsley 1 bunch cilantro 1 cup quinoa, cooked 1 can garbanzo beans, rinsed and drained – divided 1 can black beans, rinsed and drained – divided 1 handful of fresh mint leaves


Preparation: 1. Heat olive oil on medium-high heat until hot and add turmeric and black pepper until it bubbles. 2. Add chopped onion and leeks and stir until opaque or lightly browned (~5 minutes). 3. Add chopped garlic and stir until fragrant (~30-45 seconds). 4. Add vegetable broth and reduce heat to medium-low. 5. Add spinach, parsley, cilantro, mint, quinoa, and ½ of the garbanzo and black beans. 6. Cook until greens wilt (2-3 minutes). 7. Let cool slightly and blend with wand or remove and puree in batches in Vitamix or other blender. 8. Add back to sauce pan and add additional garbanzo and black beans. Mix well and adjust salt & pepper, to taste.
